even & level cakes Jun 19, 2008

Most people won't need the large size; however, I bake cakes in 14, 12, 10 inch diameter pans, and I was surprised at how even my cakes started turning out when I used these. Before they used to rise unevenly and dome in the center. Now they're level all around, which is a big help when stacking tiers. I clip mine together using mini metal binder clips.

The Bake-Even Strips do exactly what they advertise....they keep the edges of the cake from cooking too much faster than the middle of the cake, which makes for a more even cake. The strips are fastened with straight pins, which is cumbersome, especially when they're wet and don't want to stay on the pan. As a baker, I consider them worth the hassle of using, but would like to see a simpler application.

By B. G. Van Deventer I love these strips. I have baked several cakes since I received these, and they all came out perfectly level. I've even used them on rectangular pans with wonderful results. The pins that come with the strips are a little difficult to use at first, but once I figured that part out, they were easy enough to use. I have heard that all-metal binder clips can be used instead of the pins, so I might try that in the future.

These are very long and very useful, it really helps my cakes bake evenly with little to no crown. No waste -well, there's never wasted cake ;) I would recommed this item.

By teresa I used this for the first time when making a wedding cake. Was amazed how moist the cake was from the center to the outside edges. Also appreciated how much less the cakes domed during baking. The guests at the wedding, and those that had leftovers over the weekend kept commenting on how wonderfully moist the cake was. Considering I needed to bake some of the cakes 3 days ahead of time - this was what made the difference on every cake being moist!
