Helps acheive a smooth finish to butter cream icing Dec 03, 2010

I regularly use this in my butter cream icing, and it helps the icing set-up so it's not sticky. If you accidentally bump into your decorated cake, the damage is less noticeable if the icing was made with meringue powder, and many times can be repaired with a tooth pick. Because it takes the stickiness out of the icing, you can achieve a nice smooth top and sides with ease. Before adding the decorative elements, give the plain iced cake a while to dry then you can place a piece of waxed paper under your hand and slide it over the cake to smooth out the icing. Works well on the sides of the cake, too. It gives you a very professional look, removing the lines from the spatula, and I always receive praise on how smooth my icing is. The price on Amazon is also quite a bit lower than my local craft store.

By Chicago Book Addict This is a great product. I've found that it keeps pretty well under normal conditions, which is nice since I don't bake as often as I would like. It makes preparing classic royal icing a breeze and has a nice neutral flavor.

By Alis1n This is a good product it does what it is supposed to do. It is a substitute for egg whites and it works really well. Its a nice size and since a little goes a long way this 8 oz can will last me a while. Its great for use in baking! I would definitely recommend this product to a friend.

trying to thicken buttercream frosting Jul 09, 2010
By kaelazmOm I was told meringue powder would thicken frosting without making it pasty and that it was tasteless. this one has citrus in it and adds sweetness which is not what I was looking for. It doesn't make the frosting thicker either. Probably best used for meringue or I was misled in how it could be used. Not sure which one.
